The cellar philosophy expertly balances the natural generosity of the legendary local Gingin clone with serious structural tension. Following a meticulous harvest, the fruit undergoes a wild yeast fermentation before maturing for ten months in a precise combination of new and seasoned French oak foudres and puncheons. This patient, traditional maturation, combined with a measured partial malolactic fermentation, builds a deeply sophisticated, creamy framework without ever masking the vibrant, flinty minerality that defines the site.
