The fruit is meticulously cultivated on the clay-based hill slopes of the Wairau Valley, providing a crucial structural backbone to the wine. In the cellar, the approach is decisively traditional: indigenous yeast fermentation and an extended 18-month maturation in French oak barrels. By bottling without fining or filtration, the natural energy and complex texture of the vineyard are beautifully preserved.
