Bollinger is the Champagne for people who take theirs seriously. Where most houses moved to stainless steel decades ago, Bollinger still ferments a good part of the blend in oak - one of only a handful of grandes marques that do - which is where its depth and rounded texture come from. The blend leans harder on Pinot Noir than any other major house and carries a high proportion of reserve wines. It is family-owned, independent, and aged well beyond what the rules require.
