The Great Escape Chardonnay, Thistledown, Eden Valley (2024)

The "Great Escape" refers to a breakaway from the heavy, over-oaked Australian Chardonnays of the past. This is the modern face of Oz: fresh, vibrant, and bristling with high-altitude energy.

Thistledown is the passion project of two Masters of Wine, Giles Cooke and Fergal Tynan. They are obsessed with "drinkability," and for this Chardonnay, they head for the hills - specifically the cool, windswept vineyards of the Eden Valley. At 400+ metres above sea level, the grapes retain a natural, piercing acidity that you just don't get on the valley floor.

The winemaking is hands-off but thoughtful. Fermented with wild yeasts and aged in a mix of old French oak and concrete eggs, it focuses on texture rather than flavour. It isn't a butter bomb; it is a wine of citrus zest, white flowers, and crushed rock.
