Klein Constantia Cap Classique Blanc de Blanc
Klein Constantia traces back to 1685 and the legendary sweet wine Vin de Constance, but this is the estate showing what its cool Constantiaberg slopes can do with Chardonnay and the traditional method. It is made as a single-varietal Cap Classique - 100% Chardonnay - from one old block on the lower slopes of the estate.
The grapes are picked early across several batches to hold their freshness, then whole-bunch pressed using only the free-run juice. After fermentation and a first ageing in stainless steel, the wine goes through its secondary fermentation in bottle and then sits on its lees for years before disgorging - the slow part that builds the brioche depth and fine, persistent mousse. The result is texture without weight.
It pours pale gold, with stone fruit, citrus blossom and a lift of lime zest over a quiet brioche note. The palate is precise and zesty, the bubbles fine, the finish long and dry. Serve cold, around 6-8°C.
