Volcan De Mi Tierra Reposado Tequila, Jalisco (70cl)
Volcán de Mi Tierra is named for the volcano above Tequila, whose eruption thousands of years ago left the volcanic soil that makes the region so good for blue agave. The Reposado is drawn entirely from highland (Los Altos) agave, slow-cooked and rested for around four months in new American and European oak - a smart, modern-looking bottle from one of Mexico's more serious young houses.
The short time in new wood gives it more colour and depth than the resting alone would suggest: honey and caramel over cooked agave, with red fruit, toasted nuts and a gentle, campfire-like wisp of smoke through a warm, lightly peppery finish. Sip it neat or over ice, or build it into a tequila Old Fashioned where the oak and honey can come forward.
